To make the vegetarian style stuffed melanzani, wash the melanzani, cut in half lengthwise, score the cut surface crosswise and season with salt and pepper.

Place the cut side on an oiled baking sheet and roast in a preheated oven at 200 degrees until the flesh is white.

Then scoop out the melanzani and chop the inside. Finely chop the onion and lightly fry in butter. Add sliced mushrooms and sauté until soft.

Add melanzane meat and kitchen herbs and season with salt and pepper to taste. Firm the mixture with breadcrumbs and stuff it into the melanzane halves.

Sprinkle with Parmesan cheese and butter flakes and bake the stuffed melanzani vegetarian style at 180 degrees for 20 minutes.
