Instructions:

Mix the ingredients for the marinade. Pour the marinade over the young pig and marinate for 24 hours, turning the young pig occasionally so that the marinade is evenly distributed.

For the stuffing, brown the sausage, bacon, ham and kidneys, garlic, liver, heart in a greased pan, stirring continuously. Whenever the mixture becomes too dry, add a little water. After about half an hour, when the meat pieces are cooked, add onion, parsley and spring onions and continue frying until the whole is browned.

gradually add wheat semolina to the stuffing form and stirring the whole mix thoroughly. Remove from heat and add eggs and olives. Season to taste. Fill the young milk pig with this mixture and tie it with spaghetti.

Preheat the oven to 200 degrees.

Place the Young Milk Pig in the roaster, cover with bacon strips and bake in the oven for 20 minutes. Reduce the temperature to 180 degrees and roast for a total of 35 min. per 100g. Baste several times with the strained marinade.

Our tip: Use sweet red wine for a sweet note and rather dry wine for flavorful, spicy dishes.
