Maybe your new favorite bean dish:

“Succotash” is a North American Indian dish made from hominy and beans. The two were always grown together. The corn stalks made handy bean stalks, and the beans fertilized the highly nutritious hominy. So it was equally natural to serve the two together.

Soak the beans in enough water for one night. Drain the water, rinse the beans and add enough fresh water to cover them. Add the savory. Bring to a boil and soften for 45 minutes with the lid on.

Using a large kitchen knife, chop the kernels from the corn on the cob. In a large saucepan, heat the butter, add the garlic and after a few seconds the onion. Slowly fry until golden brown. Add the corn kernels and fry for 5 min. Add the thyme, basil, salt and milk and bring to a boil. Mix in the cooked beans precisely so they don’t fall apart, and let them bubble up repeatedly. Season with juice of one lemon and Tabasco sauce and remove from heat.

Do not make more, but keep warm with lid closed until ready to serve. Sprinkle with chives and serve.

Kidney or black beans can be used instead of black-eyed peas.
