Sugar Dough – with Lots of Butter

Instructions:

Butter – must be very cool – cut into pieces, add flour, sugar and salt and mix and rub everything together to a semolina-like mixture.

Add egg and egg yolk and work through only until the dough is homogeneous: the sugar dough must not be kneaded!

Rest in the refrigerator for at least 2 to 3 hours before use.
