Cut the honeydew melon in half, scrape out the seeds and fibrous pulp, and scoop out the firm flesh with a baller. Also remove the seeds from the watermelon and cut out the flesh in small balls. Blanch (scald) the peaches, skin, halve, pit and dice. Rinse grapes, cut in half to taste and remove seeds.

Combine all fruit with washed, deseeded raspberries and cool, drizzled with raspberry brandy, for 1 hour with the lid closed. About 1/2 hour before serving, add the wine and cool the punch repeatedly with the lid closed.

Finally, pour the sparkling wine and sprinkle the rinsed lemon balm leaves on the punch.
