In the warm butter, lightly sauté the diced onion. Add the brains, steam together, then pour in the hot beef broth. Let it boil once, thicken it with the starch powder, let it boil again and remove it from the stove.

Season, add wine, stir and add egg yolk cream.

Sprinkle chives on the soup cups filled with brain soup.

Tip: As an alternative to the fresh chives, you can also use the freeze-dried ones.
