Try this delicious pasta dish:

Sift flour on a tabletop and make a well in the center. Beat eggs with salt and water, mold into the hollow, add some of the flour to make a thick paste, then from the center quickly knead all the ingredients together into a smooth dough, if it sticks, add a tiny bit more flour.

Cut ham into cubes, mix with egg yolks, cheese and milk until smooth. Roll out the pasta dough in small amounts to the thickness of the back of a knife, cut 6×12 cm rectangles out of it and form 1 tsp. of the filling on each piece. Whisk the egg white, brush the edges of the dough with it and press firmly together.

Cook the Maultaschen as usual.

Tip: The Maultaschen become heartier if you use Black Forest ham and Parmesan cheese.
