Soak the peas in cold water for one night.

Put the meat in cold water. After boiling, add the onion slices, greens and spices and cook until soft. (It is best to put the bay leaf spice and cloves in a tea-egg mold for cooking.) Cook the peas with the soaking water at a low temperature.

Now mash the peas with the cooked greens and onion slices and add enough beef broth to make a soup that is not too thick.

Cut the meat into small cubes or small strips. Add the chopped meat to the pea soup form. It is also possible to cut only a part of the meat and bring the other part to the table as slices (separately).

Serve this filling stew with finely chopped fresh thyme (separately – in a dessert bowl). Serve with mustard (by all means!).

Tip: Stock up on a variety of high-quality spices – it pays off!
