Instructions:

For the sweet apple-carrot soup with chocolate balls, finely crumble wholemeal cookies, grate chocolate into small pieces and place in a bowl.

Knead together ground almonds, melted butter, orange liqueur or orange juice until well combined. Chill the dough for 30 minutes.

Form small balls from the chocolate mixture and roll in white chocolate, cover and chill. For the soup, peel carrots, cut into small pieces in a pot and boil just covered with water for 5-7 minutes until soft.

Peel apples, cut into quarters, remove core, dice and add.Pour milk, stir in cinnamon and vanilla sugar.

Remove the pot from the heat and finely puree the soup, sweeten with honey to taste and let cool.

To serve, divide the sweet soup into bowls, place chocolate balls on top, decorate with carrot slices and lemon balm if desired and serve.
