Prepare a dampfl from yeast, some lukewarm milk and 2 tablespoons of flour and let it rise in a warm place. Then, together with the remaining milk, flour, melted clarified butter, yolks, sugar, salt and aniseed, knead into a smooth dough and let rest for another 1/2 hour. Form the dough into a roll of about 1 1/2 cm in diameter and cut pieces of it about 2 cm long. Twist each of these pieces into a thin roll and form a pretzel. Place the pretzels on a baking tray lined with baking paper, brush with yolk, sprinkle with a few remaining anise seeds and bake at 180° C until golden brown.
