For the sweet potato curry, first peel and finely chop the garlic and ginger. Wash, pluck and finely chop the Thai basil. Wash the young onion and cut the green and white separately into rings. Peel carrots and cut into slices. Peel sweet potatoes, cut into bite-sized cubes and pre-cook in salted water, after 2-3 minutes add carrots and continue to simmer for about 5-6 minutes. Quench.

In a wok or large skillet, heat the peanut oil and sauté the whites of the green onion, garlic and ginger. Add curry paste. Deglaze with coconut milk and pour in soup. Simmer gently for about 15 minutes. Add vegetables, half of the young onion greens and Thai basil. Season to taste.

Serve the sweet potato curry sprinkled with the cashews.
