For Syllabub with Rose Petals, pour white wine and sherry into a bowl and add rose petals. Cover and leave to infuse overnight in the refrigerator. Pour the wine through a sieve and mix with sugar, lemon juice and grated zest.

Puree the rose petals with a blender. Mix the rose puree with the wine. Add whipped cream and crème fraîche and beat by hand until creamy.

Pour the syllabub with rose petals into dessert bowls and garnish with rose petals.
