Cook tagliatelle according to package directions. Peel and finely chop the onion and garlic. Heat vegetable cream in a pan, sauté onion and garlic. Add spinach, pour vegetable stock, bring to a boil and simmer covered for about 5 minutes, stirring occasionally.Stir in brunch and parmesan, season with salt, pepper, nutmeg and lemon juice. Mix with the tagliatelle.
