For the terriyaki chicken, cut chicken breast into strips and cook in soy sauce and sugar. Place a sheet of seaweed on a sushi mat.
Lightly spread the sushi rice on 2/3 of the sheet. Cut the cucumbers into strips and place on top of the rice with the chicken strips.
Roll up the seaweed leaves with filling – slice the maki roll and place on a sheet.
Serve the terriyaki chicken with the cucumber maki rolls.
