Thai Fried Vegetable Rice with Chicken Breast Strips

Instructions:

For the vegetable rice with chicken breast strips, cook the rice in water until done. Cut the chicken into thin strips, finely chop the garlic, cut the leeks into fine rings and the peppers into small pieces.

Heat the oil in a wok or large frying pan. Sear chicken until hot and set aside or remove from pan. Add garlic, leek and bell bell pepper and sauté until hot.

Add peas and bamboo shoots and sauté until hot, about 5 minutes. Push vegetables aside, whisk eggs and add to center of pan. Allow the eggs to set briefly, breaking them up as you would an egg dish.

Stir in rice and let brown for about 5 minutes. Mix in lime juice, chili powder, sugar, rice vinegar and soy sauce.

Season with salt and serve the vegetable rice with chicken breast strips.
