Instructions:

Peel apples, quarter, core, cut into narrow wedges.

Bring wine, apple juice and water to a boil with sugar, sliced vanilla bean, lemon peel spiral and washed currants, add apple slices and steam until soft, about 10 minutes.

Remove vanilla bean and lemon peel.

Mix cornstarch with some cold water, bind apple grits with it, i.e. bring to boil once while stirring carefully, apple slices should not fall apart.

Season to taste with a little lemon juice. Leave to cool in a bowl.
