Instructions:

For the tomato olive salsa, wash the tomatoes and dice them finely. Drain the olives and cut them into fine rings. Prepare the dressing with olive oil, lemon juice, cumin, salt, pepper and sugar.

Add all the remaining ingredients to the dressing and mix well. Put the tomato-olive salsa in the refrigerator for about 2 hours and let it infuse well.

Just before serving, pour into glasses and garnish with parsley.
