For the tomato raita, wash the tomatoes and cut into small cubes. Cut the onion into very small cubes and mix with the tomatoes and yogurt, cumin, salt and pepper.

In a small pan, fry the mustard seeds in ghee until they begin to pop, then immediately add to the yogurt mixture with the ghee. Let the tomato raita cool well and serve cold.
