Instructions:

Roll out the puff pastry to a thickness of 3 mm. Cut out a circle of about 20 cm ø. Refrigerate. Brush the baking tray of an 18 cm ø cake springform pan with oil. Sprinkle sugar, salt and pepper on top. Cut the tomatoes in half diagonally, leaving the green stalk to taste. Place on the baking sheet with the cut side facing up. Chop basil and sprinkle evenly over tomatoes.

Season again with salt and pepper if necessary. Place the pastry base over the tomatoes. Bend the edges a little bit down into the baking tray.

Prick the dough regularly with a fork. Bake at 180 °C for about 15 minutes or until the dough is golden. Remove and turn out on the spot onto a wire rack.

Our tip: As an alternative to fresh herbs, you can also use frozen ones – they also stand out for their fresh taste!
