For the Topfenzipferl, first knead the curd cheese, butter, flour (enough so that the dough does not stick), egg and vanilla sugar together to form a dough. Let rest for about 20 minutes.

Then roll out thinly. Cut out circles (with a suitable mold or simply with a glass). Fill the center with apricot jam, fold the circles together and press the ends firmly together.
