Instructions:

For the Topfenzipferl, first knead the curd cheese, butter, flour (enough so that the dough does not stick), egg and vanilla sugar together to form a dough. Let rest for about 20 minutes.

Then roll out thinly. Cut out circles (with a suitable mold or simply with a glass). Fill the center with apricot jam, fold the circles together and press the ends firmly together. Then bake in the oven at about 170 degrees until the Topfenzipferl is lightly brown (about 20-30 minutes, depending on the oven).
