Instructions:

Wash the freshly caught trout well on the inside, remove the scales on the outside if necessary. Place the fish on an aluminum foil greased on the inside.

Make a herb butter with butter and fresh garden herbs and generously coat the inside of the trout with it. Put salt on the outside as well as the inside of the fish.

Slice a lemon and place 2 slices per fish inside. Cover with aluminum foil and cook in a heated oven at 200°C for 15-20 minutes.

In the meantime, peel the raw potatoes and cut them into thin wedges. Place in a baking dish and coat with coarse salt and olive oil. Also cook in the oven for about 20-25 minutes at 200°C.

Serve the trout with potatoes.
