For the trout with peppery crust, pluck thyme leaves from stems and chop. Coarsely crush pepper in a mortar. Mix thyme, salt and pepper together well.

Wash trout well inside and out, dry. Rub trout well inside and out with pepper mixture. Wash lemons, slice and insert into trout.

Grill trout on a grill pan for about 7 minutes on both sides, arrange the trout with peppery crust and serve.
