For the tuna mousse, open the tuna can and drain the tuna. Soak the gelatin sheets in water. Peel and chop the onion and mix it with the tuna and the creme fraiche.

Heat the lemon juice and dissolve the squeezed gelatine leaves in it and mix into the mixture. Then fold the whipped cream into the tuna mixture, season with salt and pepper.

Pour this mixture into a mold lined with plastic wrap and smooth it out. If you like you can soak a gelatine sheet in e.g. 2 tablespoons of juice of a lemon, orange or whatever and stir it into a cranberry jelly and spread it on the tuna mousse to finish.

Close the cling film over the mousse and put it in the refrigerator for some time.
