For the tuna sandwich with quail eggs, first hard boil the quail eggs in boiling salted water for 3-4 minutes. Cool under cold water and peel.

Blend tuna with a little oil as well as a good squeeze of lemon juice or mash with a fork and stir well. Stir in some mayonnaise, capers and/or green peppercorns. Season to taste with salt and pepper.

Now spread tuna cream on all the white bread slices. Cut quail eggs in half lengthwise, divide among four bread slices and cover with remaining white bread.

Cut tuna sandwiches diagonally or widthwise once and arrange.

Serve immediately so that the tuna sandwiches with quail eggs do not dry out.
