For the Tuscan style beans, soak the beans overnight in enough water. The next day, cook them in unsalted water with the bay leaf until soft, at least 1 hour. Just before they are soft, add a little salt.

Heat the olive oil in a pan and sauté the diced onion. Add the finely chopped garlic together with chopped thyme, rosemary and sage and stir briefly. Mix in the beans and deglaze with the strained tomatoes. Season with salt, pepper and a little sugar and simmer for a few minutes until the beans become creamy.

Cut the peeled, seeded tomatoes into small cubes and mix into the beans with the chopped parsley.
