For the Tyrolean dumplings, cut onion, bacon and sausage into small cubes and fry in a little fat.
Whisk the eggs with milk, salt and pour over the bread cubes. Add bacon and onion mixture and season with parsley. Sprinkle a little flour on top and let rest for 10 minutes.
With wet hands, form dumplings from the mixture. In a large pot, bring plenty of salted water to a boil and place the dumplings.
Boil gently until they rise nicely, about 10 minutes. Lift out with a slotted spoon and arrange on preheated plates. Garnish with crispy fried bacon if desired.
