Instructions:

Beat the butter until thick and creamy, then gradually beat in the eggs.

Mix semolina, flour and baking powder and fold in with the buttermilk. Season with pepper and paprika (be careful with salt because of bacon!). Sources.

Clean the paprika, rinse and cut into small pieces. Finely dice the bacon. Clean, rinse and finely slice the leek or scallions.

Fry the bacon in a frying pan and sauté the vegetables in it. Season with salt, bell pepper and paprika. Remove from heat and cool.

Fold the vegetables into the batter. Preheat the waffle iron (speed 5 1/2), grease it and bake waffles from the batter in batches. Briefly steam the waffles on a broiler.

Serve the waffles with herb curd and bell pepper strips.

If you use a coated waffle iron, greasing is only necessary at the beginning.

Our tip: Use bacon with a fine, smoky note!
