For the vanilla blackberry cream, mix milk, sugar, yolks, vanilla sugar, cornstarch and salt in a pot and bring to a boil.

Let cool and stir again and again so that no skin forms. Whip the cream until stiff and fold into the vanilla cream. Heat sugar in a pan until it caramelizes.

Add blackberries, cook gently until sugar dissolves and let cool. Pour the vanilla cream and blackberry puree alternately into glasses and decorate the blackberry vanilla cream with whipped cream.
