Instructions:

Beat the butter in a baking bowl with a mixer (whisk) until creamy. Slit the vanilla pod lengthwise, scrape out the pulp with a pointed kitchen knife and add to the butter form. Add vanilla sugar and sifted powdered sugar, salt and egg yolks and mix well. Whip the double cream with a whisk until stiff and fold into the vanilla mixture. Leave to cool overnight.

To serve, dip a teaspoon or tablespoon in hot water and make dumplings of the vanilla mixture, place in a glass or on a plate.

Grate shavings from the milk chocolate or possibly from the couverture with a sharp kitchen knife and garnish the vanilla mousse with them.

Tip: Do you prefer milk chocolate or dark chocolate? Depending on the case, use whichever tastes better to you.
