Instructions:

For the vanilla pear tart, first prepare the short pastry. Sift the flour onto the work surface and press a well into the flour mixture. Add the chopped butter, sugar, egg, lemon zest and salt to the well and quickly knead all ingredients into a smooth dough. Let the shortcrust dough rest in a cool place for about half an hour.

Preheat the oven to 180°C.

Meanwhile, stir the vanilla pudding powder into the milk and mix with the whipped cream and granulated sugar. Stir the eggs into the glaze.

Peel the pears and cut them into wedges. Drizzle with a little lemon juice to keep them from browning.

Grease a cake tin with butter and press the short pastry into the tin. Pull up the edge so there is enough room for the icing. Prick the shortcrust pastry base a few times with a fork and pre-bake briefly in the oven (about 10 minutes).Spread the pears on the pre-baked shortcrust pastry base and pour the vanilla glaze over them.

Bake in the oven for about 45-50 minutes. 10 minutes before the cake is ready, sprinkle the vanilla pear cake with almonds.
