Beat the egg and separate. Mix the egg yolks with the cornflour. Beat the egg whites with a pinch of salt until firm. Cut the vanilla bean lengthwise and scrape out the vanilla pulp.

Bring the milk, butter, sugar, salt and vanilla to the boil. Stir in the egg-starch mixture and simmer gently for about 5 minutes, stirring occasionally.

Fold in the beaten egg white.

Pour the pudding into bowls, let cool and then turn out decoratively onto plates.
