Clean the kidney, soak and cut into strips. Pepper and fry on all sides at moderate temperature. After about 5 minutes add the onions, a little later the garlic. When everything is well browned, remove the kidney pieces from the frying pan and keep warm.

Dissolve the gravy with clear soup and balsamic vinegar and add the remaining ingredients except for the parsley. Boil the stock to a syrup, add the warmed kidneys and parsley, toss and serve with macaroni.
