Pasta dishes are always a good idea!

Rub the roast well with salt and pepper, then sauté in hot butter with the chopped vegetables, extinguish with the hot broth and cook the roast in the oven until done, basting it frequently. It tastes exceptionally good when the clear soup is prepared with veal bones.

At the end season the sauce with lemon or wine. Serve with homemade pasta and a fresh herb salad. This is a feast!
