Try this delicious pasta dish:

When you order the roast from your butcher, ask him to really put in enough veal kidney as well. Rub the roast well with salt and pepper, then brown it in the hot butter with the chopped vegetables, extinguish it with the hot clear soup (it tastes exceptionally good if you have prepared the clear soup from veal bones) and cook the roast in the oven, basting it frequently.
