Season the boned kidney piece with salt and pepper. Place the kidney, divided lengthwise and washed, on top so that the entire length of the meat is covered with kidney. Roll and wrap with string so that the kidney is in the middle of the meat roll.

The butcher also offers already rolled veal kidney roast.

Brown the meat in butter fat in a roasting pan, pour the beef broth, add the vegetables and onion and roast in the oven for about 2 hours. Remove the meat and keep it warm. Strain the sauce through a sieve and thicken with whipped cream.
