This involves steaming it more in its own juices than roasting it, because too much heat would dry out the meat protein, as we all know. Afterwards, the roast can be left lying around for hours without losing its juiciness. The recipe:

Soak white bread cubes in milk and squeeze well. Mix with the veal mince. Add finely chopped onion, egg yolk, parmesan, parsley, marjoram, gingerbread spice and cinnamon, season with salt and freshly ground pepper. Knead everything together very well and with wet hands shape into a seven cm thick sausage.

Soak the pork net in cold water and lay it out on the surface. Wrap the minced sausage in it.

Cook on a baking sheet in the stove at 120 degrees in about ninety minutes.

Before serving, caramelize under the grill snake all around, brushing with the gravy that has come out.
