For the lentil goulash, heat the oil in a large pot, sauté the finely chopped onion and (if fresh) finely chopped ginger and deglaze with the paprika powder.

Stir everything through, pour the vegetable soup over it, add the plate lentils and simmer on a low heat, covered. The fresh plate lentils need about 30-40 minutes until they are soft.

Meanwhile, peel the potatoes and cut into small cubes. After the lentils simmer for about 15 minutes, add the potatoes.

Add the cilantro, chilies (or dried chilies) and cumin. Simmer covered for another 15-25 minutes until the lentils are tender. Just before the end of the cooking time, season with salt and pepper to taste (you may need a little more salt, depending on your taste).

Finish with the parsley and soy yogurt. It goes well with pastries and green salad.
