For vegan puff pastry, first boil 1/2 liter of water with the vegan soup cube and pour over the soy mince, set aside.

Peel the greens and onion, wash if necessary and chop. Drain the soy mince through a sieve. Heat oil in a pan and fry vegetable cubes, add soy mince, add salt and pepper and fresh herbs if desired and remove from heat.

Roll out the puff pastry, cut each roll into 6 squares. Place the pastry squares in silicone molds (oil them beforehand if necessary), put the filling in them, press them together a bit and pour the soy melt over them.

Bake the vegan puff pastry in a preheated oven at 180 degrees for about 20 minutes.
