For the vegan spaghetti in garlic marinade, cook the pasta in salted water until al dente. Pit the avocado and remove the skin.

Set aside a piece about 2×2 in size (preferably dark green) and dice the rest of the avocado. Sauté in a little oil and finally salt and pepper well.

Put the avocado pieces aside and deglaze the pan with a dash of vegetable soup – turn off the heat. Mash the avocado piece set aside with a fork and stir into the soup.

Peel and press the garlic clove, then add to the pan and stir in as well. Season to taste with apple cider vinegar, olive oil, salt and pepper.

Place the quenched pasta in a saucepan and toss in the marinade. Add sautéed avocado pieces.
