For the spelt rhubarb cake, mix the spelt flour with the baking powder and add the powdered sugar. Mix the soy flour with water and add the coconut oil, then mix all the ingredients together.

Mix the mixture well and pour into a greased mold. Cut the peeled rhubarb into pieces of about 1-2 cm and spread on the dough.

Bake at about 160 degrees convection for about 35 – 45 minutes, depending on the size of the mold. Test the cake with a chopstick to see if it is done. The spelt rhubarb cake is best served still warm.
