For the vegetable-cheese spaetzle, prepare the spaetzle dough. To do this, put flour in a bowl, season, add olive oil, eggs, water and mix to a viscous dough. Put salted water on to boil. Press spaetzle through a spaetzle strainer, boil briefly, strain and rinse with cold water. Chop vegetables of choice. In the meantime, cut the onion into rings and roast in a little butter until dark brown. Put spaetzle with vegetables in a pan, sprinkle cheese on top and mix with whipped cream. Mix everything again briefly until the cheese is melted and draws nice threads. Put into a plate and sprinkle the roasted onion over the vegetable-cheese spaetzle – voila!
