For the vegetable cocktail, drain the sweet corn. Wash and clean the runner beans and cut them into 3 cm long pieces.

Peel the cucumber and cut it into pieces. Wash and roughly dice the tomatoes. Steam runner beans in salted water until soft, strain and let cool.

Peel onion and chop finely. Cut pepperoni in half, remove seeds and chop finely. Wash and finely chop parsley.

Place salad ingredients in a bowl and mix together. Mix a marinade of oil, vinegar, lemon juice, salt, pepper, parsley, pepperoni and onion and add to the salad.
