Instructions:

Roast mustard seeds in a saucepan without oil until they begin to crack. Add ghee or oil. Stir-fry onions until soft. Add curry paste, stir-fry until it begins to smell fragrant.

Stir in tomatoes, yogurt and coconut milk. Add carrot and simmer without lid for 5 min on low heat.

Add cauliflower and melanzani, gently simmer for another 5 min. Add the remaining ingredients. Cook without lid for another 10-12 min.
