Instructions:

For the vegetable curry with basil, peel the vegetables, onion and garlic and cut into small cubes. In a large pot, sauté the onions and garlic with a little olive oil until translucent. Then add the rest of the vegetables, the finely chopped chili pepper and the curry powder and sauté for another 5 minutes.

Add the tomatoes and water and simmer on low heat for 15 minutes until the vegetables are soft. Add coconut milk salt and pepper to taste.

Serve the vegetable curry with basil in a bowl while still hot and garnish with basil leaves.
