For the vegetable loaves, boil vegetables and cut into cubes. Boil potatoes with the skin in 15 minutes. Peel potatoes, mash with a fork and mix with vegetables in a bowl.

Peel and finely chop onions and sauté in hot oil until translucent. Stir the onions into the vegetables and season everything with salt, pepper and parsley. Mix eggs and flour well with the mixture.

Using a large spoon, scoop out a portion of the mixture and shape into loaves. Turn the vegetable loaves in breadcrumbs and fry in hot oil until golden brown on both sides.
