For the vegetable muffins, preheat the oven to 200 degrees and line a muffin tin with paper cups. Clean and finely dice the carrots.

Wash and chop the broccoli and blanch in boiling water for one minute. Peel and finely chop the garlic clove. Mix flour, cornmeal and baking powder with salt, parsley and vegetables.

Mix about 2/3 of the cheese with the flour as well. Beat the egg with oil and buttermilk. Then fold in the flour mixture. Pour the batter into the molds and sprinkle the muffins with some cheese.

Bake vegetable muffins at 200 degrees for 20 to 25 minutes.
