For the vegetable pancakes au gratin, first grate the cooked potatoes on a grater. Cut the vegetables into small cubes, mix them in and season vigorously with the appropriate spices and herbs. Finely chop garlic according to taste and stir in as well. Beat eggs, fold in and bind the mass with flour. Season again to taste.

Heat some oil in a frying pan, place the mixture in the form of small pancakes with the help of two tablespoons and flatten slightly. Fry on both sides until golden brown.

Meanwhile, preheat the oven to maximum top heat. Place fried pancakes on a baking sheet lined with baking paper, cover with tomato slices and season them with salt, pepper possibly oregano. Cover with cheese and bake in hot oven until cheese is nicely melted.

The gratinated vegetable pancakes go well with cold chive sauce.
