For the vegetable soup, dice the onion and sauté in the butter. Also chop the greens (except for the leek and parsley) and sauté them a bit.

Pour in water and bring to a boil, then crumble in the soup cubes, add salt and pepper and let it boil a bit.

In this vegetable soup fit all the leftover vegetables, including tomatoes and potatoes.
