For the vegetable soup, chop onion and garlic and fry lightly in oil. Add the carrots in small pieces and the leeks in fine rings to the pot and fry them briefly.

Pour the water, add the potatoes cut into cubes and the peas. Add the remaining vegetables from the greens either whole or cut into small pieces. Bring to a simmer.

Just before the vegetables are cooked, add the frankfurters cut into thin slices. Bind with flour and season with salt and pepper.
