Briefly rinse, dry and dice the meat. Heat the coconut oil in a roasting pan and brown the meat, turning it. Add bay leaf spice, paprika powder, cayenne pepper, herb salt and cumin. Deglaze the meat with the vegetable soup. Cover and simmer for 70 minutes. In the meantime, clean, rinse and cut the leek into rings. Remove the peel from the onion, carrots and celery and dice them. Add the vegetables to the meat at the end of the cooking time and simmer the stew on low heat with the lid closed for 20 minutes. Before serving, remove the bay leaf and sprinkle the stew with parsley.
